These bite sized strawberry brie tartlets are the perfect little treat to serve at a party all year long. The sweet to salty ratio is just right and will have you reaching for more until they’re gone.
On a scale of how difficult these are to make, they’re like a 0. I don’t know if its possible for these strawberry and brie tartlets to be any easier to make and that’s a win in my books. This 4 ingredient recipe is suuuppper easy but I can promise guests will be impressed by how tasty and pretty they are!
This post is all about how to make bite sized strawberry brie tartlets for a sweet and salty snack at any party.
What You Will Need
In total, everything you will need is less than 5 ingredients plus one pan for cooking and another for serving. Clean-up is made easy with very few dishes.
Here is your grocery list:
- 1 round of brie
- 1 box of refrigerated pie crust or puff pastry. I used the Bake House Creations Pie Crust from Aldi
- Fresh strawberries
- Strawberry Jam (Walmart) or Strawberry Preserves (Walmart)
- 1 mini muffin pan or tart pan. I used the Crofton Mini Tart Pan from Aldi. It was an Aldi Find in their Summer time Alex’s Lemonade Stand theme in 2021 but has not appeared back in stores yet. You can’t beat the price of an Aldi Find but sadly these are not sold year-round. However, there are similar pans to these that are available such as this Wilton 12 Count Mini Tart Pan at Michaels.
Why Bite Sized Tartlets Are Best
These tartlets are the perfect finger-food that can be made in a hurry and served at a party. I always find that guests are more likely to eat the less messy and smaller items on the table, especially if it’s a party where everyone is roaming around and not necessarily all gathered in one seating area.
Tartlets are easy to pick up and are sized for individual consumption which makes them appealing to guests. Not everyone is interested in committing to a whole slice of cake, but they might be interested in a bite sized tartlet.
When it comes to individually portioned items, they tend to take more time to make than a shareable item. For instance, one large tartlet compared to 24 mini tartlets would vary in time. I would argue that the time evens out between the two and it shows in the cook time. The bite sized tartlets will spend less time in the oven than one large tartlet does since the cheese melts faster in smaller portions.
Best Time To Serve
Strawberry brie tartlets are suitable to serve any time of year but my personal favorite is during the summer when fresh fruits are in season. Summer is a popular party season and I am not one to shy away from throwing one! Whether you are or aren’t a party person, I think everyone can appreciate a quick and easy dessert for those last minute parties on summer nights.

Modifications
Brie is such a versatile cheese and it pairs well with many fruity flavors! I love switching up the fruit topping I use for these tartlets. Blueberry, raspberry, blackberry, cherry, apricot, and orange marmalade are great options when modifying your tartlets.
When I have extra time and am feeling a little ambitious, I like to use a combination of fruits to serve a platter full of assorted tartlets. However, it’s usually much more convenient to stick to one fruit. Strawberry has been my go-to fruit topping since I haven’t had anyone turn down a strawberry flavored tartlet yet. I’d like to keep it that way!

Strawberry Brie Tartlets
Ingredients
- 2 sheets pie crust or puff pastry thawed
- 1 egg + 1 tablespoon water
- 8-10 fresh strawberries sliced
- 1/2 cup strawberry jam or preserves
- 1 8 oz round of brie cheese with rind removed
Instructions
- Preheat oven to 400°F. Cut each dough sheet into 2 inch pieces. Each sheet should result in 12 2" pieces for a total of 24 2" pieces.
- Place dough pieces in ungreased tart pan (or mini muffin pan works). Press dough against sides and bottom of pan while also rounding out the dough as best as possible to fit the mold without folding over the top.
- Use a fork to poke holes in the bottom of the dough to keep from rising too much.
- Whisk together the egg and tablespoon of water. Using a brush, lightly add the mixture over each dough piece.
- Place in the oven and bake for 7-10 minutes or until golden brown.
- While the dough cooks, wash and slice the strawberries. Remove the stems and slice perpendicular to where the stem was.
- Next, scrape off as much of the rind as possible on the round of brie, being sure to get all sides. Cut the brie into small cubes and set aside.
- Once the dough has finished baking in the oven, remove and let cool until the centers collapse. Then, layer a piece of brie in each pastry cup, followed by a dollop (about a teaspoon) of strawberry jam, and finally add on a strawberry slice.
- Bake for 3-5 minutes or until the brie has melted. Serve while hot and enjoy!
