The Best Time To Serve Guacamole Deviled Eggs
Is there really a bad time to serve guacamole deviled eggs though? I’m pretty sure I could find a way to work in this dish to just about any party or any meal of the day. I recently served these at a Super Bowl party at my neighbor’s house and I wasn’t sure how well they would do next to all of the other must-have game day snacks and appetizers. To my surprise, they were practically gone 5 minutes after I put them down! People thought these deviled eggs were “geneius” when in actuality I think I just got really lucky that there wasn’t a bowl of chips and guac out already. Everyone must have been in need of a guac fixing that day, woohoo!

- Taco Tuesday – Okay, this one isn’t really a party but it is a good time to have these bite sized deviled eggs! Imagine sipping a margarita with chips and guac, except instead of chips it’s an egg! See where I’m going with this?
- After school snack for the kiddos! This might not be a party, but it is a healthier snack option to have for the kids when they get home from school.
Tips For Making The Best Deviled Eggs Ever
- It’s all in the guac! The egg is nearly just a medium to hold the guac in individual bite sized portions. These deviled eggs are only as good as the guac inside them is.
- Make sure to serve these right after making them. Since guacamole tends to brown fast, you won’t be able to make these ahead of time and have them stay fresh in the fridge for too long.
- My #1 tip when it comes to making deviled eggs is using a bag to pipe the filling into the eggs. It’s faster, easier, less messy and makes them look better than spooning them in. One could argue that this step is the most fun of them all in the process. I recommend using a sandwich or quart size ziplock bag and cutting the tip of one of the bottom corners to pipe your filling into the eggs.
- Dusting the top of guacamole deviled eggs with cayenne pepper is the equivalent to dusting paprika on top of classic breakfast-style deviled eggs. Did you know that the act of dusting the tops of deviled eggs with paprika is actually what makes them “deviled” eggs? At least according to one theory, deviled eggs got their name from equating the red powder to the devil’s dust. Hence the title “deviled” eggs!

- Tomatoes – you could use roma, cherry or any other tomato of your preference. In this recipe, I used cherry tomatoes

The truth behind a really good guacamole deviled egg is 100% all in the guacamole. And that’s why I made sure to use my favorite classic guacamole recipe for this one.
So what makes guacamole so good? Lime, garlic salt, and lotssss of fresh ingredients!
Have you ever had guacamole that was just lacking in flavor? Did you feel like it was missing something? Or maybe it just tasted like straight avocados? Yeah, me too. Definitely not what we’re going for in these guacamole deviled eggs. The secret to making sure you don’t end up with bland guacamole is to taste as you go. When you think you’ve added more than enough salt, it might still need more. It happens to me almost every time I make guac. And by almost, I mean every single time. I’m not sure if avocados have some super power in masking the flavor of salt but it always feels like you need an extra heavy hand when salting your guac.
Having Mixed Thoughts About This Dish?
If you have any hesitations in regards to this appetizer I can’t say I blame you. Bright green guacamole stuffed inside a hard boiled egg sounds a little like a green eggs and ham moment. The appearance alone might pique your interest or make you feel slightly uncomfortable. Either way, you can’t come to the conclusion that you like them or not until you taste them.
This is one of those food combinations where you can’t help but wonder if the flavors actually go together or not. It always catches my eye when I see a classic dish get re-invented. In this case, breaking down the ingredients makes it easier to understand how and why these flavors work together and taste so good.
Think of these guacamole deviled eggs as a comparison to one of the healthier breakfast options we are starting to see more and more of at restaurants, avocado toast. If we pull out two common ingredients from avocado toast, we see that there are avocados and eggs. A common way to serve avocado toast is on a slice of toasted bread with mashed avocado, poached or over-easy eggs, and topped with cheese and a tomato mixture such as pico de gallo. If avocado tastes good with warm cooked eggs, then so can guacamole with a hard boiled egg.

Guacamole Deviled Eggs
Ingredients
- 12 eggs
- 2 avocados
- 3 tbsp sweet or white onion, diced
- 1/4 cup cherry tomatoes, diced
- 1/2-1 jalepeno use 1/2 for less spice and 1 whole for more spice
- 4 tbsp lime juice
- 1/2 tbsp garlic
- 1 tbsp cilantro
- 1/2 tsp crushed red pepper
- 1 tsp garlic salt
Instructions
Hard Boil Eggs
- Set out 12 eggs and bring to room temperature
- Bring a large pot of water to a boil. Once boiling, reduce the heat to low and gently add the room temperature eggs to the pot. If using 12 eggs, let them boil for 36 minutes. (Or multiply the number of eggs you are using times 3 and set your timer for that many minutes!)
- Once eggs are done boiling, remove from pot and allow them to cool completely. You can put them in a bowl of ice water if you are in a hurry.
- Once eggs are cooled completely, peel the shells and cut each egg in half lengthwise. Scoop out the yolk and discard.
Make the Avocado Filling
- Cut the avocados in half lengthwise and remove the pit. Scoop the avocado out into a small-medium bowl
- Wash and dry the jalapeno then remove the seeds. Finely dice half the jalapeno and add it to the bowl with the avocado
- Add the remaining ingredients to the bowl with the avocado and jalapeno. Mash with a fork or whisk until desired consistency is achieved
- Scoop the guacamole mixture into a zip lock bag and make a 1/4" inch thick cut on one of the bottom corners. Carefully pipe the guacamole mixture into each egg using a circular motion
- Garnish with cayenne pepper and serve immediately. Enjoy!
