Guacamole Deviled Eggs

Change things up with these guacamole stuffed deviled eggs for your next party. Any avocado lovers will fall in love with these! They are fresh and packed with flavor!

Ingredients

  • 12 eggs
  • 2 avocados
  • 3 tbsp sweet or white onion, diced
  • 1/4 cup cherry tomatoes, diced
  • 1/2-1 jalepeno use 1/2 for less spice and 1 whole for more spice
  • 4 tbsp lime juice
  • 1/2 tbsp garlic
  • 1 tbsp cilantro
  • 1/2 tsp crushed red pepper
  • 1 tsp garlic salt

Instructions

Hard Boil Eggs

  • Set out 12 eggs and bring to room temperature
  • Bring a large pot of water to a boil. Once boiling, reduce the heat to low and gently add the room temperature eggs to the pot. If using 12 eggs, let them boil for 36 minutes. (Or multiply the number of eggs you are using times 3 and set your timer for that many minutes!)
  • Once eggs are done boiling, remove from pot and allow them to cool completely. You can put them in a bowl of ice water if you are in a hurry.
  • Once eggs are cooled completely, peel the shells and cut each egg in half lengthwise. Scoop out the yolk and discard.

Make the Avocado Filling

  • Cut the avocados in half lengthwise and remove the pit. Scoop the avocado out into a small-medium bowl
  • Wash and dry the jalapeno then remove the seeds. Finely dice half the jalapeno and add it to the bowl with the avocado
  • Add the remaining ingredients to the bowl with the avocado and jalapeno. Mash with a fork or whisk until desired consistency is achieved
  • Scoop the guacamole mixture into a zip lock bag and make a 1/4" inch thick cut on one of the bottom corners. Carefully pipe the guacamole mixture into each egg using a circular motion
  • Garnish with cayenne pepper and serve immediately. Enjoy!
