Set out 12 eggs and bring to room temperature
Bring a large pot of water to a boil. Once boiling, reduce the heat to low and gently add the room temperature eggs to the pot. If using 12 eggs, let them boil for 36 minutes. (Or multiply the number of eggs you are using times 3 and set your timer for that many minutes!)
Once eggs are done boiling, remove from pot and allow them to cool completely. You can put them in a bowl of ice water if you are in a hurry.
Once eggs are cooled completely, peel the shells and cut each egg in half lengthwise. Scoop out the yolk and discard.
