Grilled Chicken Caesar Salad

Every time I make (or honestly even see) a grilled chicken Caesar salad, I think of my little sister. For years, it was basically her “safe food.” You know how kids latch onto something and won’t let it go? That was her with Caesar salad. Anytime we went out to eat, without fail, she’d order one. She’s grown out of that phase now that she’s a young adult but to this day, it’s become a running joke in our family. If there’s a Caesar salad on the menu when we’re out to eat, one of us will point it out to her and say, “Look, there’s a Caesar salad, aren’t you going to get it?” We all laugh about it but truthfully, I get it—there’s just something classic and comforting about it. I’m here for a crisp romaine-based salad every now and then, especially when the lettuce to dressing ratio is just right. I’m the kind of girl who likes it saucy. Give me all the extra dressing…I can pretend that those calories aren’t adding up lol.

What You Need to Make A Homemade Chicken Caesar Salad

  • Romaine Lettuce – I like to get the pre-washed romaine hearts from the store. If you’re in a pinch, you can grab a bag of pre-chopped and washed romaine.
  • A loaf of sourdough or french bread – I used pre-sliced sourdough from the bakery section of my grocery store for this one. You can also use other groms of crunchy bread like a french baguette or italian bread.
  • Parmesan Cheese: Shaved or shredded is best! I buy the pre-shaved kind or shave a block myself if I remember to grab one at Costco or Sam’s club. And no – grated parmesan will not be the same.
  • Chicken – Cut, season, and cook to your liking. I prefer to cut mine into 1-2 inch chunks and season with Gyro Hero and Salad Supreme seasonings.

  • Mayo – This is the base of the caesar dressing.
  • Lemon Juice – Fresh is best!
  • Worcestershire Sauce – This gives the dressing the zesty tang it needs
  • Dijon Mustard – Yes, there is in fact mustard in Caesar dressing
  • Anchovy Paste – 1,000% necessary in order for this dressing to taste like actual Caesar dressing. It’s also not too hard to come by, I get it at my local Publix for less than $3. The brand I use is Giovanni’s in a squeeze tube but any brand will do just fine in this recipe
  • Garlic Powder – Used to season the croutons and the dressing
  • Salt & Pepper – Use to taste on the chicken and croutons

Tips and Tricks to The Best Caesar Salad

If you’ve only ever had a Caesar salad at a restaurant, making one at home can feel like a total game-changer. The secret to the best Caesar salad really comes down to three things: homemade Caesar dressing, freshly toasted croutons, and seasoning your chicken.

For the dressing, don’t be intimidated—it’s creamy, garlicky, and comes together quickly with pantry staples (except the anchovy paste, I don’t think that’s a staple for anyone). Making your own dressing gives you control over the flavor (a little more lemon, a little less garlic, totally up to you). You can make the dressing ahead of time or right before tossing the salad so do what works best for you and your schedule. My biggest tip for the dressing is to use the anchovy paste, do not skip it! I’ve tried making the dressing without it before and thought surely it wont change the taste that much. Wrong. It does make a difference, so do yourself a favor and grab some before you get started on this recipe.

Next, let’s talk croutons. Sure, store-bought works in a pinch, but nothing beats these warm garlicky croutons straight out of your oven. I recommend using fresh bread from the bakery – something that is a little crusty already on the outside but still soft on the inside. I used pre-sliced sourdough and cubed it up. Before putting them in the oven, make sure to drizzle with olive oil, salt/pepper, and garlic powder and arrange in a single layer so they all get toasted evenly.

For the lettuce, fresh is best. Always wash and chill your romaine before tossing. Cold, crisp lettuce just takes the whole salad up a notch. I highly recommend using a salad spinner after washing and chopping to remove as much excess water as possible. This will help the lettuce from getting soggy and keep it as crisp as possible. The Best Time To Serve Up Some Grilled Chicken Caesar Salad

There’s never a bad time for grilled chicken Caesar salad, per say. It’s one of those versatile dishes that works as a quick weeknight dinner, a light weekend lunch, or even a starter or side for a dinner party or BBQ. I love serving it on busy weeknights because it’s filling without being heavy, and it comes together pretty fast. It shines as a side dish for a cookout or a potluck since it’s freshly homemade with love. It’s crowd-pleasing and pairs beautifully with grilled meats or pasta.

And if you’re anything like my family, it might even spark a little nostalgia around the table. Because sometimes, food isn’t just food. It’s a inside jokes and comfort all tossed together in one big bowl.

Variations & Add-Ons

To be honest, the beauty of a caesar salad is how simple it is. But, that’s not to say there aren’t other ways to enjoy it. Something like –

  • Shrimp or Salmon Caesar Salad: A simple swap. Use shrimp or salmon instead of chicken! It might not be the classic way, but shrimp or salmon add a fresh, extra summery vibe if you ask me.
  • Healthier Caesar Salad Dressing: If mayo isn’t your jam for whatever reason right now, the good news is you can totally swap it out for a gut healthy, higher protein option – plain greek yogurt!
  • Extra Veggie Caesar Salad: Some people like a little extra umph in their salad and if that’s you, then you might try adding cherry tomatoes and/or avocado chunks.
  • Bacon Caesar Salad: One of the best things you can add to a salad is bacon, so why not do it with it a caesar salad?
  • Pasta Caesar Salad: Add some chilled pasta to the chicken salad to make it even more suitable for a casual summer party. Pasta salads scream summer party.

Chicken Caesar Salad with Homemade Dressing

Fresh, flavorful, and filling—this grilled chicken Caesar salad with homemade dressing is the perfect recipe for summer lunches, weeknight dinners or as a side to the next gathering you host!

Ingredients
  

Grilled Chicken

  • 3 Chicken breasts, cut into 1-2 inch chunks
  • 2 tbsp Olive oil
  • 1 tbsp Malcom's Gyro Hero Seasoning optional, see notes at the bottom to get it on Amazon
  • 1 tbsp McCormick Perfect Pinch Salad Supreme Seasoning optional, see notes at the bottom to get it on Amazon

Dressing

  • 1/2 cup Mayo
  • 2 tbsp Lemon Juice
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Dijon mustard
  • 2 tsp Anchovy paste
  • 1/2 tsp Black pepper
  • 1 tsp Garlic powder
  • 2 tbsp water optional, to thin out the dressing making it easier to toss salad

Croutons

  • Fresh sourdough or french bread, cut into 1 inch cubes
  • Olive Oil
  • Garlic powder
  • Salt & Pepper

Lettuce & Cheese

  • 2-3 Large romaine hearts washed and chopped
  • 1/3 cup Shaved parmesan cheese

Instructions
 

  • Begin by washing and chopping the romaine lettuce to your desired size and add to a large bowl. Set aside or back in the fridge to keep chilled.
    Tip: use a salad spinner after chopping up your cleaned lettuce to remove as much water. This will help keep the lettuce crisp and prevent soggy salad
  • Dice up your chicken breasts into 1-2 inch cubes. Add to a pan on medium heat with olive oil and chicken seasoning of your choice. Cook for 5 minutes on one side then stir and cook for an additional 4-5 minutes until both sides of the chicken chunks are lightly browned and cooked to an internal temperature of 165℉
  • While the chicken cooks, cut the bread into 1 inch cubes. Add to a baking sheet and drizzle with olive oil, salt, pepper, and garlic powder. Mix around and make sure the cubes are in a single layer. Add to a preheated 375℉ oven and bake for 10 minutes until a little golden on the edges and crunchy to the touch.
  • Make the dressing by combining the mayo, lemon juice, dijon, worcestershire sauce, anchovy paste, garlic, and pepper. Add 1-2 tbsp of water if you wish to thin it out for easier assembly (optional).
  • In the bowl of romaine lettuce, add shredded parmesan cheese and the dressing. Toss to combine. Top with croutons and the chicken and enjoy!

Notes

Malcom’s Gyro Hero Seasoning: My favorite greek style chicken seasoning! It’s not spicy, it just has a little tiny kick in the aftertaste. It’s DELICIOUS!
McCormick Salad Supreme Seasoning: A little bit of this just ties in so well with the gyro seasoning. This adds a cheesy and zesty flavor to the chicken.
OXO Salad Spinner: This is the salad spinner I use and I love it! Easy to use, does a great job getting water off lettuce, and is easy to clean.
