This post is all about how to turn those leftover Peeps into shareable treats for everyone to enjoy. This recipe is a spin-off of the classic Rice Krispie Treats we all know and love. These Peeps Rice Krispie Treats are topped off with a melted layer of white chocolate to make the flavor and colors pop!

I swear, one of the most controversial holiday treats out there are Easter Peeps. You either hate them or you love them. Some say they belong in the trash and others try to take them from those who don’t want them. Which one are you?

Regardless of your feelings towards marshmallow Peeps, this recipe is enjoyable for all. If you like a classic Rice Krispie Treat, this recipe is for you!

Rice Krispie treats can certainly create a feeling of nostalgia for some, including me. Many of us had these treats as kids growing up and feel reminded of those simpler times when we eat one today. In that sense, I think these treats are a source of comfort.

I also speculate that these have continued to be a staple in the homemade treat selection because no matter how they’re made, they always result in an irresistibly delicious treat.

I’ve had my fair share of “uh oh” batches. From using too much butter, not enough marshmallows, forgetting to turn the stovetop off when adding the Rice Krispies, to packing them in a pan too tight, and forgetting to grease my pan and spatula, I’m continuously amazed at how well these treats still taste.

Thank goodness Rice Krispies Treats always pull through on taste no matter what “uh oh” is made. We can’t exactly get away with these mistakes on other desserts.

  • Peeps marshmallows
  • Rice Krispies Cereal
  • Butter
  • (Optional) White chocolate chips + coconut oil
  • A square baking dish (I used a 10″x 10″)
  • Spatula
  • Non-stick spray

How to Make The Ultimate OOEY-GOOEY Rice Krispie Treat

  • You’ll start by grabbing a medium sized pan. This is a one pan recipe. Yay!
  • Next, you will place the Peeps in a single layer on a greased square baking dish. I used a 10″x 10″ pan and greased it with butter. Non-stick cooking spray can also be used if you prefer.

  • Thinly slice the butter and layer it on top of a few Peeps. No need to place butter on every Peep. We just want enough butter to prevent the Peeps from sticking and burning to the pan.
  • Once your oven is preheated, bake the Peeps and butter for 7 minutes. Say bye-bye to the cute squishy bunnies (or chicks) and hello to the floating face blobs.
  • Finally, you can gently fold in the Rice Krispies and press lightly into an even layer in the pan. If the mixture isn’t marshmallow-y enough for the Rice Krispies to fully latch on, you can microwave a few marshmallows and add them into the mixture to ensure full coverage is achieved.

Why I love this Easter Treat

Classic treats always present the best opportunities to add a little holiday twist to them! Here’s a few reasons why I think you’ll love these treats:

  • It requires only one dish. Who else is a fan of one pan recipes? Less clean up? Yes please!
  • 3 ingredients + chocolate = SIMPLE. These only call for 3 main ingredients plus two extras if you want to drizzle the tops with white chocolate like I did. Simple recipes with only a few ingredients are what busy bees need during the holidays!
  • The kids will love them. This is a great recipe for the kiddos to help make. They’ll be so excited to see the Peeps melt and the colors begin to mix with the Rice Krispies.
  • You can put those Easter Peeps to use. I’ll admit I’m not the biggest fan of Peeps, but I do love baking with marshmallows! This is a great way to avoid throwing out Peeps and instead turn them into a fun Easter treat.
  • They taste just as good as the classics. Color wise, they are obviously more colorful than the classics. Taste wise, they are very similar to an original Rice Krispies Treat without as much flavor in the marshmallow department. I would highly recommend adding in a few regular mallows to create the perfect balance.

Tips for Making These Marshmallow Treats

  • Grab the kiddos and have them help! They’ll love pulling apart the Peeps, lining them in the pan, and folding in the Rice Krispies. These are great to make on Easter after the kiddos opened their Peeps-filled Easter baskets or the day after Easter when the Peeps are left for abandonment.
  • Have some regular marshmallows on hand. If you use bunny Peeps rather than chick Peeps like I did, you may want to have some regular marshmallows on hand to add in. If the Peeps mixture isn’t sticky enough to bind the Rice Krispies together, add in a few regular mallows! The chick Peeps are a bit bigger and fluffier so they might not have this problem.
  • Stick to only a few colors of Peeps. The more colors you use, the greater the chance a brown-ish color will appear. Keep the peeps organized in the pan by color. Try to fold the Rice Krispies in gently instead of using a circular mixing motion.
  • Do not use stale Peeps. Seriously, don’t do it. They will lump together and not melt correctly. Hardened Peeps belong in the garbage, not in your Rice Krispies Treats.

Easy Peeps Rice Krispies Treats

A sweet Easter twist meets the classic Rice Krispies Treats we all know and love. With Peeps instead of regular marshmallows and a white chocolate drizzle on top, these treats will bring out all the Easter feelings and colors! Fun, easy, and a one dish recipe!

Equipment

Ingredients

Rice Krispies Treats

  • 16 Peeps marshmallows
  • 6 tbsp butter, thinly sliced salted or unsalted
  • 4 cups Rice Krispies Cereal

White Chocolate Drizzle (optional)

  • 3/4 cup white chocolate chips
  • 1 tbsp coconut oil

Instructions

Rice Krispies Treats

  • Preheat oven to 375°F and grease a square baking dish and spatula with non-stick spray or butter
  • In a single layer, arrange separated Peeps in baking dish and bake for 7 minutes
  • Gently fold Rice Krispies into the melted Peeps with spatula until well combined
  • Using the spatula, lightly press the Rice Krispies treats into an even layer and let cool completely

White Chocolate Drizzle (optional)

  • Once treats are cooled, melt the chocolate chips with coconut oil in the microwave for 30 second increments, stirring in between each until chocolate is fully melted
  • With a spoon, dip into the white chocolate and drizzle it over the Rice Krispies Treats
  • Let the chocolate cool completely before cutting into squares and serving. Store in an air tight container, no refrigeration required.

Notes

*To avoid Rice Krispies from turning a brown color, keep the Peeps separated by color in the baking dish (step 2). When it’s time to fold in the Rice Krispies (step 3), the colors will naturally mix, but not to the point of turning brown. A little mixing of the colors at this step will actually look nice! 
*You may need to have some regular marshmallows on hand. If you don’t have enough Peeps or use too much butter (like I did, oops!), adding a few regular mallows will even things out!
*Lastly, do not use hardened peeps! They simply won’t melt correctly and will lump together. Throw ’em out.
