Easy Peeps Rice Krispies Treats

A sweet Easter twist meets the classic Rice Krispies Treats we all know and love. With Peeps instead of regular marshmallows and a white chocolate drizzle on top, these treats will bring out all the Easter feelings and colors! Fun, easy, and a one dish recipe!

Equipment

  • square baking pan (I used a 10"x10")
  • spatula
  • non-stick spray

Ingredients

Rice Krispies Treats

  • 16 Peeps marshmallows
  • 6 tbsp butter, thinly sliced salted or unsalted
  • 4 cups Rice Krispies Cereal

White Chocolate Drizzle (optional)

  • 3/4 cup white chocolate chips
  • 1 tbsp coconut oil

Instructions

Rice Krispies Treats

  • Preheat oven to 375°F and grease a square baking dish and spatula with non-stick spray or butter
  • In a single layer, arrange separated Peeps in baking dish and bake for 7 minutes
  • Gently fold Rice Krispies into the melted Peeps with spatula until well combined
  • Using the spatula, lightly press the Rice Krispies treats into an even layer and let cool completely

White Chocolate Drizzle (optional)

  • Once treats are cooled, melt the chocolate chips with coconut oil in the microwave for 30 second increments, stirring in between each until chocolate is fully melted
  • With a spoon, dip into the white chocolate and drizzle it over the Rice Krispies Treats
  • Let the chocolate cool completely before cutting into squares and serving. Store in an air tight container, no refrigeration required.

Notes

*To avoid Rice Krispies from turning a brown color, keep the Peeps separated by color in the baking dish (step 2). When it's time to fold in the Rice Krispies (step 3), the colors will naturally mix, but not to the point of turning brown. A little mixing of the colors at this step will actually look nice! 
*You may need to have some regular marshmallows on hand. If you don't have enough Peeps or use too much butter (like I did, oops!), adding a few regular mallows will even things out!
*Lastly, do not use hardened peeps! They simply won't melt correctly and will lump together. Throw 'em out.
