Goat Cheese Log – 8oz
- You can get these logs of goat cheese at just about any grocery store
- You only need plain goat cheese for this recipe but I’m sure an herb goat cheese would also be delicious
- Logs are better as they are creamier than crumbled goat cheese. For this recipe, we are creating a goat cheese spread so the creamier the goat cheese, the better
- This specific goat cheese can be found at your local Target
Dried Basil
- Yes, you need TWO types of basil for this recipe. Dried basil will be used in the bruschetta tomato mixture
- Finely chopped dried basil leaves will be best for this goat cheese bruschetta
- If you don’t already have dried basil in your spice cabinet, I recommend the below dried basil from Target
Alessi White Balsamic Vinegar
- There’s SO many different varieties of balsamic vinegar on the market, but the Alessi White Balsamic Raspberry Blush Vinegar is my favorite!
- It’s super affordable at Jewel Osco where I am, but if you’re not in IL you can still find this brand at Walmart, Meijer and on Amazon

Goat Cheese Bruschetta Spread
Ingredients
- 1 cup fresh grape tomatoes, quartered
- 1 tbsp balsamic vinegar
- A drizzle of olive oil
- 1/4 tsp salt
- 1-1.5 tsp basil paste or fresh basil leaves finely chopped for goat cheese
- 2 tsp dried basil leaves for the tomato mixture
- 1/2 cup goat cheese
Instructions
- Take goat cheese out to soften.
- Wash and dry the tomatoes then cut into quarters.
- Mix tomatoes, a drizzle of olive oil, salt, balsamic, and dried basil in a small bowl.
- In a separate small bowl, mix goat cheese with basil paste (or fresh basil)
- Serve on a board with crackers and enjoy!
