Preheat oven to 400°F. Cut each dough sheet into 2 inch pieces. Each sheet should result in 12 2" pieces for a total of 24 2" pieces.
Place dough pieces in ungreased tart pan (or mini muffin pan works). Press dough against sides and bottom of pan while also rounding out the dough as best as possible to fit the mold without folding over the top.
Use a fork to poke holes in the bottom of the dough to keep from rising too much.
Whisk together the egg and tablespoon of water. Using a brush, lightly add the mixture over each dough piece.
Place in the oven and bake for 7-10 minutes or until golden brown.
While the dough cooks, wash and slice the strawberries. Remove the stems and slice perpendicular to where the stem was.
Next, scrape off as much of the rind as possible on the round of brie, being sure to get all sides. Cut the brie into small cubes and set aside.
Once the dough has finished baking in the oven, remove and let cool until the centers collapse. Then, layer a piece of brie in each pastry cup, followed by a dollop (about a teaspoon) of strawberry jam, and finally add on a strawberry slice.
Bake for 3-5 minutes or until the brie has melted. Serve while hot and enjoy!
