    🧄🍝Creamy Boursin Pasta with Chicken An easy, thro 🧄🍝Creamy Boursin Pasta with Chicken

An easy, throw-together baked pasta dish to change things up from your typical spaghetti night. I find boiling the spaghetti directly in chicken broth adds extra flavor and richness (don’t skip that step if possible!)

What You Need
The Base:
•1 box spaghetti (I only used 3/4 of the box)
•1 wheel Boursin cheese (Garlic & Herb)
•1 pint grape tomatoes, halved lengthwise
•1 small zucchini, quartered
•⅓ cup red onion, diced
•2–3 cloves garlic (or 2–3 tbsp jarred minced garlic)
•32 oz chicken broth
•4 tbsp olive oil
•Salt & pepper, to taste
•Fresh basil, chopped (for garnish)

Optional Add-ins:
•2 chicken breasts or cutlets
•Italian seasoning (Kinders is my favorite)
•Bread for serving

How to Make It
1. Prep & Bake the Veggies
-Preheat oven to 400°F.
-Add halved tomatoes, garlic, diced red onion, and zucchini to a large baking dish.
-Place the Boursin cheese right in the center. Drizzle everything with olive oil, season with a generous pinch of salt and pepper, and toss everything around so it’s all coated. 
-Bake for 40–45 minutes.

2. Cook the Pasta & Chicken
-Bring the chicken broth to a boil in a large pot over medium heat.
-Season chicken with olive oil and Italian seasoning. Pop it in the oven during the last 15 minutes of the veggie bake time (cook to an internal temp of 165°F), then slice into strips.
-Cook spaghetti directly in the boiling chicken broth according to package directions. Reserve 1.5 cups of the broth before draining! 

3. Bring It Together
-Pull the baking dish from the oven and mix the melted Boursin into the roasted veggies.
-Stir in the cooked pasta along with ½ cup of reserved chicken broth. Keep adding broth a splash at a time until the sauce is glossy and coats every noodle. This is where you can adjust the texture (add more chicken broth if you want a thinner consistency, for example).
-Taste, adjust salt if needed (I added another big pinch of salt), and toss in the fresh basil.

4. Serve
-Plate the creamy pasta, top with warm sliced chicken, and finish with a little extra basil or grated parm. Serve with warm bread and enjoy!

In the midst of celebrating a small win, I found myself speaking openly about my food content creation journey so far and it felt…..vulnerable. I thought, no way am I keeping those parts in the final edit. So I cut them out.

But the truth is, the accounts I love following most aren’t just polished edits 100% of the time. They’re real people. And behind this account, I’m just a normal person with doubts, fears, and plenty of days where I’m figuring it out as I go.

And so I thought I’d share these clips anyways because I want the new friends & faces here to feel like they can relate and connect with me. I’m not perfect. I’m not famous. I’m just like you. 

If you’ve ever held back from putting yourself out there or trying something new, I encourage you to do it anyways. 

Share it while fearing judgement, failure, or the unknown on the other side. If you wait until those fears aren’t there, you’ll never get the chance to see that it turns out okay in the end after all. 

If we don’t step outside our comfort zone and do things that challenge us, how will we ever grow?
