Chicken Enchiladas 🌮🧀🫑🧅💃🏼 Next time you’re cravin Chicken Enchiladas 🌮🧀🫑🧅💃🏼

Next time you’re craving Mexican food, you must try these chicken enchiladas you can make right at home. They are so tasty and easy to pull together on a weeknight.

These are mine and my husband’s favorite enchiladas, they make for great leftovers or meal prep too! Full recipe is below!

You’ll need:
- 2-3 large chicken breasts, shredded (you can also use rotisserie chicken)
- 2 bell peppers, thinly sliced
- 2 tbsp olive oil
- 1 cup salsa (I use Pace Picante Mild)
- Taco size flour tortillas (don’t use corn - they will tear when trying to roll)
- 1 to 2 tsp each of garlic and onion powder
- 2 cans of Old El Paso Mild Green Chile Enchilada Sauce (start with 1 and use the 2nd if you want it saucier)
- Shredded Colby jack or Mexican blend cheese (you better measure this one with your heart)

Cooking Instructions:
- Preheat oven to 375F and line a large baking sheet with parchment paper. Add you chicken breasts to one side and sliced bell peppers to the other. Drizzle everything with olive oil and pop in oven to bake for 18-25 mins or until chicken reaches an internal temp of 165F
- Once chicken and peppers are fully cooked, add the chicken to a large mixing bowl and mix on low with en electric hand mixer to shred the chicken (or shred with two forks). 
- Add in your garlic and onion powder, salsa, and bell peppers and mix until everything is combined
- Add a spoonful of the chicken mixture to a tortilla and roll tightly then place seam side down on a parchment lined baking sheet. (I use the same sheet pan the chicken was cooked on and just put on a new liner). Repeat until all the chicken has been used.
- Pour the green enchilada sauce over top then finish with shredded cheese
- Bake once more at 375F for 16-18 minutes and enjoy!
